I began my love of cake decorating after taking a pair of shoes into the shoe and bag
man nearby, I wandered into the Greensborough Cake Decorating Centre and became instantly interested
in taking a class. I signed up straight away and took my first class in April 1996, after which I
was hooked and took class after class at Greensborough and other shops in Melbourne. I then went
to the USA in 1997 and did 2 weeks of classes at the Wilton
School and attended Roland Winbeckler's Professional Cake Decorating Course for a week. In 1998 I
also joined ICES, the international cake decorating society, and attended meetings in the USA through to
2003.
In July 1997, I registered my kitchen at home with the health department and opened Susan's
Novelty Cakes, doing custom cake orders from home. Just after opening Susan's Novelty Cakes, I
joined up with the Greensborough Market and spent every Sunday morning building awareness about
the business. Also in 1997, I started teaching a buttercream class at the Greensborough Cake
Decorating Centre and continued teaching there through to 2002 until I left to teach elsewhere.
In 2001 I started exhibiting at all three of the largest bridal fairs in Melbourne, and continued
to grow the cake making and decorating side of Susan's Novelty Cakes. During this period, I also
returned to the USA to take further classes, including Roland Winbeckler's Cake Sculpture course in
2001, and 2 weeks of classes in sugar work with Ewald Notter in Las Vegas.
In August of 2004 I became the new owner of Greensborough Cake Decorating Centre and incorporated both
that business and Susan's Novelty Cakes into the one place in Grimshaw St, Greensborough. In January 2006
I expanded the premises, buying out 2 more shops, and bringing together the retail store, kitchen for
making cakes, and 2 classrooms. These new additions, together with the excellent team of experienced
teachers and staff to meet your needs, makes me very proud.
